The greatest adventure in life has begun, i have finished high school and moved on with my life. Things are still good here up north, the bf and i are still goin strong:lol:

Yes i am going to attend college in the fall, at Rainy River Community College. I plan to take my general classes and after 2 years move on to a bigger college and get my RN.

I like to roast my own chilis for teh enchillada sauce.

I've never even seen a recipe for them, but I remember they were good when washed down with beer in large quantities

Sparty's Enchaladas

1 Jumbo can of Enchalada sauce (or two smaller ones)
1 can of Cream of Mushroom soup
1 package jumbo flour tortillas
3 Chicken breast (no bone) (can also substitute beef) i dont like beef lol
2 cups shredded cheddar cheese
cajun spice
some sort of marinara sauce
13*9 baking pan

take chicken breast and cut into little squares, put in container with Marinara sauce and leave in frige for 30 min.

Blend enchalada sauce, and cream of mushroom soup, and cheese (save one cup of mixture for topping)

After chicken has been marinating for 1/2 hour, take out and roll in cajun spice. Cook in frying pan.

Heat oven to 350

take cooked chicken and add to the enchalada mixture, stir together

lay out flour tortila's and add the enchalada/chicken mixture to the middle, roll up, put into baking pan (more or less depending on how much you want)

after all the tortila's are in the baking pan, pour the cup of enchalada mixture you saved over the top and add shredded cheese as well.

Put into pre heated oven for 20 min, or until hot

Sparty's Spanish Rice!!!!!


1 cup brown rice (more or less depending on how much you want, 1 cup is usually good for 2-3 people)
Taco Seasoning
Cajun Spice
Salsa


Brown rice usually takes 1/2 hour to make, so you could use minute rice if you dont want to wait, but brown rice tastes the best for this recipe.

Start boiling the brown rice in water on high. After 15 min of this, add 1 tbs Taco Seasoning and 1 tbs Cajun Spice. Stir.

After another 15 min the rice should be done or close to it, add a cup of Salsa to the rice (more or less depending on how you like it)

Cover for 5 min, serve..

If you ever want to try your hand at your own enchilada sauce-

Stuff:
10 fresh pasilla and/orancho chile peppers
4+ cloves crushed garlic
1 onion
4 tablespoons butter
4 flour
3 cups chicken stock
2 teaspoon dried oregano
1 teaspoon ground cumin
salt & pepper

I prefer to roast my chilis on the grill in the backyard but you can roast them in the oven, preheated to 350 degrees on a cookie pan and roast them until they just start to blister.

chop them in half and scrape out seeds and veins (leave some in for more heat) then put them in a bowl with boiling water to cover them for half an hour. Remove them but keep the water. Scrape the pulp from the insides of the chile peppers and most the skin. Return the pulp to the water and set aside for later.
In a large saucepan over medium heat, saute the garlic and onion in the butter untill they are translucent (you can substitute butter with olive oil if you want)

Add the flour a little at a time and stir in. Add the chicken stock (veggie stock can be a substitute), and then add the reserved chile pulp mixture. Throw in the oregano and the cumin.
In a blender or food processor, grind it all up until it's all happy together. add salt/pepper as desired.

The ingredients can be increased equally and a large batch can be made. Divide it up in plastic bags and freeze for whenever you want some sauce.


Some people out here have chili roasting drums and you can do up a SACK of chilis all at once in a short time. Another nice basic SW sauce to have about is Adobo.

I have a great recipe at home in a rare Southwest/Mexican cookbook but the gist of it is:


Chipotles in Adobo Sauce
7 to 10 medium-sized dried chipotle chiles, stemmed and slit lengthwise
1/3 cup onion, cut in 1/2-inch slices
5 tablespoons cider vinegar
2 cloves garlic, sliced
1/4 cup ketchup
1/4 teaspoon Salt


From the author: "Chipotles in adobo are chipotles that have been stewed in a lightly seasoned liquid. They have become very popular in Southwestern cooking because the provide a distinctive warm heat and delicious smoky flavor. They can be added to almost anything, including breads, sauces, salad dressings and pastas. Although you can buy canned chipotles in adobo (look for them in markets that specialize in Hispanic foods), this homemade alternative is far superior and is very easy to prepare."
Combine all of the ingredients in a pan with 3 cups of water. Cover and cook over very low heat for 1 to 1 1/2 hours, until the chilies are very soft and the liquid has been reduced to 1 cup. This recipe will keep for several weeks in the refrigerator in an airtight container.
For chipotle puree, place the cooked chipotles and sauce in a blender and puree. Put through a fine sieve to remove seeds. Makes 1 cup.
Per Tablespoon: 9 calories, .3 gm protein, 3 gm carbohydrates, 0 gm fat, 0 gm saturated fat, 0 mg cholesterol, 73 mg sodium.
